Mirabel, ma belle! Mirabel plums are cute, have a bright yellow colour, and above all...they are deliciously sweet!
Pure candy by mother nature. You can use them to make jam or delicious desserts, like these frangipane tarts.
Ingredients:
- 4 sheets of puff pastry - 12 cm by 12 cm
- 333 g mirabelles
- Lemon juice (1/3 lemon)
- 83 g self rising flour
- 50 g almond powder
- 2 eggs
- 0.7 dl cream
- 40 g sugar
- 7 g vanilla sugar
Preparation:
- Oven at 180°C (low air)
- Roll out the puff pastry in small pie pan shapes
- Bake the dough for 15 minutes
- Cut the mirabelles in half slices, remove the seeds
- Sprinkle some lemon juice over the prunes
- Add a fine layer of almond powder to the tartlets
- Place the mirabelle plums in the tartlet bottoms
- Mix the flour, eggs, almond powder, sugar and cream to a smooth batter
- Then pour this mixture over the mirabelle plums
- Grease the puff pastry with some egg yolk
- Bake the frangipane tarts for 22 minutes at 180°C
