Rhubarb is a fresh and sour vegetable, but have you ever thought of using our vegetable of the month in a strawberry tart? Enjoy this delicious recipe!


  • 60 grams of butter
  • Four tablespoons of rhubarb compote
  • 65 grams of strawberries
  • Half a teaspoon of almond flakes
  • 135 grams of flour
  • Half a bag of vanilla sugar
  • Salt
  • ¼ egg
  • 30 grams of sugar


  • Cut the strawberries into pieces.
  • Mix the butter, vanilla sugar, salt, sugar and flour in a bowl. Beat these ingredients into dough with a mixer.
  • Divide the mixture between two bowls. Set one bowl aside. Add egg to the other bowl and mix again. Then knead the mixture together with some flour until it becomes smooth.
  • Now use a baking tin with some baking paper. Grease the edges with some butter. Spread the dough over the mould, and let it rise a few centimetres over the edges.
  • Now add the rhubarb compote. Finish off with the strawberry pieces.
  • Now cover the whole with the dough from the separate bowl. Sprinkle some almond flakes over it.
  • Place the tart in a preheated oven at 180 degrees. After forty minutes, you will have a delicious rhubarb tart with strawberries!
